The only thing I have trouble with, is setting up the vanishing points so it's not too distorted. Should I measure everytime with a protractor when I do my grids?

Use Clip Studio Paint and the perspective tools. I used to do 3 point perspective on paper, and had perspective points nearly off the drawing table. Never again. Also, eyeballing is your friend. You could get mathematically accurate, but that's for suckers.
