Faces are hard, but what you need to do is just copy faces from characters you love. You need to pay close attention to every single line, pay attention how it is curved, where it connects, ask yourself why it is longer or curvier than the other lines. Also watch some pro draw characters you like, slow down the video and see how they draw the lines and copy the exact way they do it. With time you will have this engraved in your mind and faces will become really easy.

I painted a blue woman with very bad anatomy. Just messing around with brushes. Even though she's all lopsided and weird neck, odd proportions, I'm still pretty happy with the result, as strange that may be. First time in a long time I tried to draw a face so just happy I gave it a shot. This was all from imagination. Yeah my redlines always follow the original proportions as much as possible, because I think there's something HOT at the core of the image, I just try to make it look good as was intended by the artist. Otherwise, you have to redraw her whole head, shorten her neck, then the arm covering her mouth will cover the tit grabbing action, wich is not negotiable lmao. To me coom must be flexible, it should bend to the idea, and not the other way around.
I almost don't even try to be anatomically accurate anymore after drawing so much clothed characters, that torso you did is fucking great, accurate and beautiful. Congrats.

Is that drawing yours? that's great. To me, Construction methods will never match raw grinding, sometimes you have to jump and swim. At some point you will build your own shapes. In pic related I scribble some horse stuff, with out reference, I kinda wing it, because my head created some VERY BASIC primordial shapes through out the years. I didn't studied that, my head build that and put it in a shelve close for grabbing.
You can study methods but it will be hard to stay motivated and focused. Sometimes we learn the most when we have fun the most.
Just keep drawing man. Feed your brain with images, copy, copy and copy, and you brain will build those basic shapes, resources and tools for you.

Oh yes, if they are doing a million dollar budget production, they better be certain on what they will be putting on paper. That's why I put them as a great reference resource, there's solid construction on those animated designs. What I'm saying is that they already did all the heavy lifting. Those final designs are artistic wonders.
If a beginner is put to do the construction method those guys do (or did r.i.p.), a joyful beginner student will be crushed. I think that's the problem in much cases, all these technical methods filters too much good willing motivated people.
As you said, there must and should be a middle ground between methodical construction and symbol creation systems.

one of my beg books talked about painting: the beginner just needs shitton of cheap BIG paper, 1 good quality brush (the flat type which doesnt bend easily), tube or white, tube of black and bottle of turpentine or similar like acetone (for cleaning the brush) any knife, and something to use as palette. Also i saw some dude recommending begs to paint on panel made from glass so save even the paper. And once you get competent with these you slowly add more brushes and colors as you level up

What I've done is simply apply a multiply layer with a dark blue, and very roughly add highlighting on another layer on top. Also, unless you're very close to the surface/blonder, hair should be mostly dark with very little light whatsoever. Basically, REFERENCE!
After that I just made a few minor edits, I added some random fishes in the background to make it less empty, and then I filled the foreground with more seaweed and rocks. Corals would work as well to add variety, but I'm not sure what type of ocean this is supposed to be and avoided making assumptions.

Maybe you are drawing them too slowly or too fast? I find that people have a certain speed where they are able to draw perfect lines.
Also, have you found if you prefer to pull them towards or away from you? If you prefer diagonal or vertical or horizontal?
