Why is it when I do mindless doodles and sketches they often turn out far better than when I put in effort to actively draw something pleasing?

Sketch: raw-ish and somewhat unfiltered, you can see the thought process, lots of possibilities and unbound energy

Finished: self-conscious, hammering things down into a final piece that may not capture the intended feel or soul of the earlier prototypical work.

I too experience this.
I was doing a portret sketching session of 3 hours, I did a few quick drawings inbetween and the proportions were way better than on the one drawing I was "serious" about and constantly checking and adjusting.

It's something I need to overcome, or maybe I need to start out my drawings more loosely and less focused on checking and measuring.

Over-thinking and polishing often make one's art stiff.
This is the idea behind grinding fundies. If you internalize the concepts, then at some point you stop thinking about how to draw properly. Instead you can focus on your expressiveness and style, making your art more loose and effortless looking.
