That course has also been streamed online it seems. I have looked around for a while now but I don't know where I could find videos of that.

I'm new to painting and color theory and it's been eye-opening. Exponential value scales (pic related), chroma vs. saturation, painting for value or color, explaining how color mixing actually works, it's one of the few art books that I can't put down because of how much it's teaching me. I just finished the first chapter today and I'm gonna re-read it to take notes.

The main two chapters on Color and Light are written by Charlie Pickard with his own paintings, diagrams, and charts. The next ~130 pages are projects written by the other three. I've taken Fowkes' courses and it's definitely his own writing and processes. The Gallery section brings in several different artists to comment on their pieces. It doesn't feel like it's written by someone else but it does feel edited down to a couple of pages.

Yes. The informational "Color" and "Light" chapters are written by Charlie Pickard with his own paintings and diagrams, along with a few from the other featured artists. Nathan Fowkes, Guweiz, and Djamila Knopf each have about 30-60 pages to explain a complete proect and it's definitely written by them. For Nathan Fowkes it's the same writing style he uses in his courses, the same process in his demos, and he shows off some of the brushes he regularly uses. The gallery is also really written by the artists but it feels more condensed, maybe edited down. Each artist only gets 4 pages.

Looks promising, but most I'm familiar with most of the covered material, and I've bought Gurney's book already, so I don't see the point of getting it, personally.

That being said, retrospectively, for a beginner, it looks like a great introduction; I'm sure if you're motivated, however inconvenient, you should be able to get something by studying the flip through (copy images, google the topics, etc.)
