In manga or cartoon styles I like it when characters have either pronounced nose or none at all.
I hate fucking dot noses, but I get the feeling most people prefer dot noses or noseless characters.

What's the optimal nose design that appeals to the audience?

I like no nose (or VERY small dot nose) or "shadow" nose because dot nose looks like those creepy animal "cosplay" when people put their noses into ink can. IDK why but I very don't like it IRL. And "real" noses are cringe too, usually it's ok only on photos or real people or on realistic renders. Pure IMHO.

I'm a nose kinda guy myself. I think they add a lot of character to a face. It's a very attractive facial feature, imho- not in a weirdly obsessive fetish way, but aesthetically very pleasing to me. So much more difficult to draw right than itty bitty noses though.

That's because I modeled her after Ryoko Kui's gnomes. Which isn't to say that I wouldn't actually make a screwup like that in the first place but it is actually intentional this time around.
Dungeon Meshi gnomes are adorable, I wish they had more prominence in the story.

Speaking of really cool facial features though, Ryoko Kui's ogres/oni really take the cake. It absolutely kills me that we aren't going to see more of them besides Tade in the story. (If you aren't already aware, Tade is the one with the cute girlish features on the far right, third row from the top.)

learn how to draw simplified figures like pic related and how to pose them naturally (comes with good grasp on gesture) then use your favorite artists work as reference to flesh them out. you don't need to mindless copy them but rather adapt their work to your own. for example, observe how they draw the curves of the lower leg (is that curve closer to the knee or the ankle? is the leg thicker at the knee or at the ankle? will it look different from another point of view?) and try to apply it to your drawings. draw AND study, but mostly draw
sometimes you won't be able to properly translate what you see to your drawing which is where anatomy comes in, so to answer the other question:

it also allows for more creativity and diversity in the character design. Anime is a pretty minimalistic style so any features that can help with getting a story across should be embraced imo
