My best advice is to sketch it out with like 3-5 values with a 100% opacity hard round brush (after doing a sketch if you have the patience of a saint) -- then fill in the values with approximate colours -- view it zoomed out frequently to make sure that the proportions are perfect and then fill in the colours from there. Make the art look good in the beginning -> finish the art. And it will probably look lopsided when you flip it so cut and paste/warp/liquify the shit out of it until the proportions look correct and abuse photoshops filters until the colouration matches

It really depends on how much patience I have. To be honest, I've been trying to work on my lineart but you never even see once I paint over it so I feel like sometimes it just isn't that beneficial. It can be helpful for mapping points if I want to 1:1 copy something photorealistic, though. Except when I just want to do lineart or flats rather than painting.

Because making the values read well is a lifehack that makes the art look wayyy better than it technically should composition-wise. See Craig Mullins' schoolism course for more info (should be in the course /ic/ mega or something -- I just watched the values part on like 2x speed which doesn't take long). If you can easily distinguish between the character/foreground/background it attracts the eye more easily and makes your characters stand out instead of fading into the background.

And once you have the grayscale, you can pick colours that approximately match the values so it gives you hints on how dark you should make things in order for it to look good. And if you have a great reference you can also start to imagine how to block in the lighting in your brain (because it gets confusing once the colours start getting slapped on). Obviously, now you'd imagine why a lot of the chinese artists and other peeps go from grayscale -> colour -- because it can let you do really complex stuff with lighting and you don't have to know exactly what colour comes out the other end and just use gradient maps and stuff like that. The problem is that grayscale does make art look soulless if you don't spend forever painting over it. But if you block out in like 3-5 values you can quite easily get the shapes to read well and also can quickly change the colours by selecting over it and then it looks natural because you're just painting over that
