What makes anime, as an art style, so appealing to such a wide variety of people? What is it about this style that has allowed it to become such an influential and wide-reaching style?

It's not appealing at all to me, it feels bland, uninspired, lazy, tropey, I could go on and on about all the problems I have with it, and this is true for 95% of manga/anime artists out there.

My main problem with it however is the laziness, most people drawing anime just throw anatomy and perspective out of the window, they simplify too much in exchange for 'cuteness', but the end result is not cute or pretty at all, it's pathetic.

Those are the exceptions and I even have my reservations with Murata. But in the end Otomo, Murata, Inoue, Miura, Asano, Tsutomu, Oku and maybe some five or six others I'm not remembering now are part of a very small group among the thousands of mangakas.

It's easy to draw and the symbol drawn faces gives the spectator the ability to easily self insert or fall in love with a character. I just wish weebs didn't use anime as an excuse to be garbage at drawing, there are beautiful anime but weebs refuse to watch them because "it doesn't have little grils i can self insert into!!!1!".

Because it is overly sexual. It takes the features our brain is wired to like, and enhances it. Perfect skin (because who would draw blemishes), perfect bodily shape, big eyes (feminine and youthful) and more. 3DCG can obviously accomplish the same things if done well enough, but as of now, most people just make uncanny valley stuff.
