As an aspiring future mangaka myself Who doesn't care much for animation in general, what exactly make something look too western to be considered anime? For example something I find too western stylistically to be considered anime at all is Avatar, but I honestly can't explain it in words clearly. The same can be said for most other "americanime" except for maybe RWBY and Castlevania, really.

I'd guess, it's the nose.
And ATLA doesn't believe in eyelids it seems(at least most of the time).

Compared to most anime: Ears too high, nose too noticable, eyebrows too low, iris is perfectly round and simple, hair lacks sharp shiny highlights

You need asian genes.

The noses
The hairstyle
The shading
Everything
If you don’t just see it, you never will. You’ll never be a mangaka because you’ll never learn Japanese well enough to write a series in it, just stick with webcomics.

From what I've seen in Avatar and a few scenes from the Castlevania animation, the camera movement and framerate combined, giving it a stiff choppy movement.
Also scenes that are "still-pan to the side along with character - still" almost like a sitcom or something, while from what I can recall from anime it is "still" "soft-pan" "movement throughout the take". Hope that helps clear some things.

Hope you are ready for the grind, and live a very healthy life to avoid dying from exhaustion at 45. As someone drawing professionaly, i'll tell you this : when you change your passion into a job, it becomes that : a job. There are days you will HATE drawing, you'll hate something that you previously loved so much and mangaka doesn't allow breaks to recover.
I'm not saying this is unreachable, but this is a factor you need to seriously consider. Anyway, what the others anons said about the western art vs jap.

So what? Oda started One Piece when he was 22.

I guess it depends, I've been working in animation and video games, those sectors tend to be grindy anyway. But still, far less grindy than mangaka

Korra/Avatar has pretty kino animation. It’s just it has this weird choppy movement sometimes that gives it this western feel.

oda won the tezuka manga award at 17, and so probably spent 5 or so years in the manga world before one piece. he didn't just rock up to shonen jump with a one shot at 22. not saying it's too late or anything though, but how many connections have you made so far? because reading in between the lines, you seem a bit too optimistic for an industry that really dislikes foreigners.
