For a good fucking reason.
A sausage is a volumetric shape in 3d space.
If your brain sees a flat line or a circle on paper that means your drawing is flat, doesn't look spacious and sucks. If you see a sausage, a cucumber, a bean - then your brain actually interprets it as a volumetric shape.

And i'm dead fucking serious. Bean/sausage/cucumber shapes are the easiest way to sketch something up with a sense of volume.
