I'm really struggleing with drawing this damn head shape
I draw the lines on the ball and then add the chin part but I can't figure out how to make the sides flat :/

You have to study form for this, sadly there's no easy way for this, just practice. Draw a 100 spheres and draw their flat sides, eventually you'll understand it better. One trick you could use to help is to buy a small styrofoam ball, cut the sides and paint the equator and centerline, like Proko did here

Construction's really there for you to think about forms and stuff, it's a guideline, not a rule. You can construct whatever you wanna draw how you want to as long as it still reads well. Don't get caught up in just one method, it's okay to break away and figure stuff out y'know.
