There are two things that keep a close western imitation of anime looking like legit anime: negative/positive space relationships and notan. westerner's clutter their drawings with positive space, while the Japanese prefer to balance it out with negative space, I would even say they have more of a bias towards negative space since the omit so many details when it comes to faces. The other thing is notan, it's light color vs dark color relationships, the Japanese try to find balance between them so light or dark don't dominate each other in a design but also to enhance a composition with bold contrast (pay attention to shading and matte blacks).
When I see someone that draws with this stuff in mind, I think it looks legitimately anime-like regardless of the style.

Of course you'll never be able to draw anime if you view it as this mystical unreachable artform passed down in secret ancient temples.

Honestly, I mostly picked up on the negative space thing from reading John K's blog and he says that a lot of [western] cartoonists underestimate how much negative space there is when copying drawings and I realized that it is quite the opposite with the Japanese.
As for notan (it's quite related to negative/positive space but more about value), it's a word I've seen in quite a few books by old western artists and illustrators but it's so damn confusing the way they talk about it that it's just easier to learn about it by looking at Japanese art.

I think Notan has to do a lot with composition. You can essentially break down a lot of Japanese art into abstract black and white shapes, that's what manga essentially is too. I don't think gesture is a requirement in making something look like it was done by a Japanse person, I've seen very child-like drawings that look Japanese just because of these two things.

His perspective is just from a western cartooning standpoint but it applies to the errors westerners make when they imitate anime too. I mean think of it, alot of westerners impressions of anime are, "ooh big eyes", but when you break it down, an anime character's eyes probably take up much less space on their face compared to a typical western character, all that negative space on anime faces makes the eyes pop more, it isn't that the eyes are big.
