For the life of me, I find it impossible to properly grasp fabric and cloth weight. I keep trying to wrap my head around it but I just have a hard time drawing clothes.
Is there any books or online resources that can help? Simply drawing and referencing clothes alone doesn't seem to help me.

Burne Hogarth, Dynamic wrinkles and drapery helped me lots! It's very easy to read and the explanations are simple and effective. I recommend copying a bunch of them before trying to add them to your own work, so you have a general undersanding. Pay special attention to "anchor points" when drawing anatomy, too.
