It's not just your toolset, it's your color choices too. They're all very similar in value, only the torch really pops, and it's colors don't even really complement the rest of the scene very well. Darken your darks, lighten your lights, a lot of your colored works seem to lack contrast.
Also, the girl's face looks a bit lazily done, I think you might want to try focusing on quality over quantity for a little while, because no offence, you seem to put little effort into your sketches and you don't seem to be learning much from them.

There's no such thing as a dark yellow, that's why the picture doesn't work. Try adjusting the greyscale to a brown, you might have more luck with that. Either way you're gonna have to adjust the colour of the shadow spots manually by just using a different colour there.

IMO - you're issue is you're seemingly hesitant to really commit to laying down solid values and colors. This looks like you drew something and set it to 40% opacity on a white background - it's just washed out and whispy. I think you should get more comfortable using deeper saturation and darker values, and utilizing thicker lineweights.

I'm trying to achieve a really soft kind of fantasy-storybook aesthetic with my coloring technique. I think a watercolor look is a step in the right direction but it's difficult to replicate digitally, and I can't find many resources about it.

Does anyone have any info about digital watercolor? Info regarding other aesthetic-focused/non-realistic coloring techniques would also be really helpful
