How often do you finish things?

If you do nothing but practice sketches you'll get good at doing practice sketches, not finished work. Stuff like rendering is basically an entirely different skillset and requires more patience than anything.

Bruh, you really need to finish your stuff and learn to polish. I say this because your early stuff looks a lot like mine used to, and I got stuck on a perpetual "unfinished projects meh" plateau that really fucked me over for longer than necessary.
For me it was the fear of investing too much time on something shitty, which ultimately just left me with a 3-year gap of any actual finished work.
What worked for me was taking on a project completely far out of my skill level with the knowledge that I was absolutely going to fuck it up even after investing 2 months in it. It wasn't a total disaster, and I'm really happy I did it, because now I've done more finished work I can use in my portfolio than all my work combined from 2013-2016.
I don't have my own progress pic, but I'll do one at some point. In the meantime feel free to ignore me if you think I'm larping.

My progress goes back before 2004, but I didn't own a scanner back then and I'm not quite sure where my scanner is.

My art education at the time consisted of a few tips I learned in highschool art class, tutorials, observing other artists, and basic construction from a Chris Hart book.
The vast majority of my work was spontaneous and from imagination and just a lot of trial and error.

I started taking studying more seriously in 2016 and it's helped a lot.
Now I'm putting in 25 hours a week of study, and another 7-14 hours of drawing for fun.

I'm not the one who drew it. Sorry for my rude tone, was a bit mad 'cause the suggestions you were making will detract them from making progress.

For now they still haven't mastered block-in properly, which needs to be addressed (hence looking pillow-y as you said). Messier strokes are not going to help of they don't know what the hell they're doing; textures' importance always will come later.

For now I hope that they will focus mastering anatomy/construction more than anything else first, which will fix their understanding of form/muscle (or as you call it, pillow-y but that's a fucking vague unhelpful term which i hate). They also have an awful choice in colours, though that is more of a lower priority. Thing is, seeing a fullbodypic makes it easier to judge their skills.

the real answer here is that he isn't using the light source properly, so he's been getting inaccuratr values. as in if the ls comes from the left, why isn't the hair also lighten up? rim light as you would call it will be needed. ears are not receiving light properly. more of a case of values mistake than lacking in "lightplay".

or you were suggesting him to use multiple light sources , hence the word lightplay.... but be aware that /beg/ are already having difficulties finding values with a single light source. how the hell are they going ti deal with multiple light sources???

I figured I'd come in here to cheer myself up, but that doesn't even work.
What I need help with the most is getting over that initial hurdle of stopping with half-finished exercises and starting to really try to make something, and it really fucking wears on me that I never see the jump from 0 to 1.
This thread has plenty of people who went from 1 or 2 out of 10 to a straight 8, but what I haven't seen at all in all my time here is someone, anyone, who went from 0 to 1.

How do you get over the hurdle that even the newest, even the most talentless and the most intentionally lazy and incompetent people eclipse you through barely anything more than a wave of the pen? I'm getting told every single time that "you don't have to be afraid of failure, you just have to learn the fundamentals and draw", but that's advice aimed towards people who already know how to draw, just not draw well.
It seems that everything I look at, even the most shamelessly beginner-pandering guides and condescending advice, assume that you have some level of artistic skill in the first place, or otherwise, like Loomis, it just goes from "draw a ball" to "now draw faces and hair and glasses and shadows from an angle".
