What tends to happen is the "red" areas have more flesh and have more blood to diffuse the light. Bluer areas are more fatty or connective tissues, which combined with the usually lower lighting seen in these areas, such as the chin or around the nose, creates the bluer/green shading that you're describing.

Why don't you just try figure it out on your own with really simple shapes instead of looking for somebody to spoonfeed you their technique? Look at some references, break them down, and redline with really simple 3D shapes you can move into every kind of view. You don't need a tutorial for it, plus you've got a couple hands right in front of you that you could stare at.
Most people have issues with drawing hands because they don't bother constructing them like they're real things, so they just draw the outline and struggle. Just picture everything you see as built up of simple shapes, then you could draw anything.
