The neck is "wrong" because it's huge but otherwise nothing is wrong with it, it's just an ugly guy. People don't want ugly ugly people, they want average ugly people, which is just an average person and not a super-pretty model which is what usual characters look like.

I'd say you should start by refining the underlying structure. You should research and try to draw skulls from a few different angles. Then go and check out the muscles of the neck (you seem to sort of grasp the muscles and fat of the face but it never hurts to look at that stuff too). Anytime you're wondering why something doesn't look right in one of your drawings just take the time to research a good reference photo and carefully compare it.

The only trick to drawing well is understanding what you're drawing. You can't understand something without breaking it down and learning how it works and what it looks like.

Now I have no idea if I'm doing my ears sort of right or not.

You're right though, I really don't know what I'm doing when I'm drawing a head some times and it shows. Looks like there's a lot more to it than learning proportions.
