My proposal here is: make a finalized piece of work, maybe with the same theme of the sketches he tore apart, if you can.
Give it your all. Frame it if you're feeling fancy and are not a broke-ass artist like me. Don't take pictures of the result, don't make it retrievable besides the original, that is irrelevant.

Then, find the dude and give the art piece to him. Don't be aggressive, don't be smug or resentful, be an adult:
"I'm sorry about my reaction the other day. You can look at this one as much as you want. Please, don't destroy people's work so lightly, you don't know what they can mean to them;"

And walk away.
On a second thought, don't frame it with glass, otherwise this could become a bloodbath, but I think you can handle this.

This might result into nothing, but this might as well result in making a caveman reflect for the first time in his life. As for you, consider doing this entire thing both an opportunity to grow and a punishment for not having bashed his skull in back then.
