How many layers of audio do you need for an animation to not sound like amateur dogshit or a bad video game?

And do any of you guize have any experience or advice on "dimensionalizing" audio? Like if I pan the camera around and want my ambient traffic noise to sound like it's reacting accordingly and going around your head?
