exaclty how did he do it, what kind of brush setting did he use or are there other way with grid lines and pencil pressure

It's an old school comic background technique that's simulating a coquille-type texture. It's just varying and breaking up your brush strokes from thick to thin and thinning it out at the end. then repeating at a 90 degree angle.

Interesting, show me how and maybe it'll save me some time. Large swaths of texture can be very time consuming.
