Study the skull, the side plane ellipse is just a simplification of the temporal ridge and the side plane of the head that is created by the temporal line and the side of the skull.
So to answer your question, the degree of the ellipse will change according to how oblique the head is to your perspective. The more oblique the head is the greater the degree the less oblique the lesser degree of the ellipse.
