Symbol drawing usually means drawing what you think something is, rather than the shape of what it actually is. Most common example is an eye. A portrait like >>3333075 the model is looking to the left (three quarters view) but the eye is drawn like it's seen from the front. And even that isn't really realistic depiction but rather how we imagine an eye is. Sort of like egyptians used to do the eye make up. It's not really how eye works. That's one example.
