I forgot to say, you'll need to prep the panels whichever kind you use. You can buy oil primer for a really ultra smooth surface, or gesso which will dry faster (but require sanding down between multiple coats) and can be easier to work on. I prime canvas that is too rough with oil primer to get rid of that weavey look. People like Godward used lead oil primed very fine linen. I recently studied one of his IRL as I'm painting a master study, and both the texture of the linen and the paint was completely smooth.
