i'd say you're on the right track with your "volume knob" visualization there. but imagine that in perspective, imagine it as an ellipse. you can use ellipses to rotate stuff in perspective.
i'm not necessarily doing it correctly in my image, just approximating.
i would suggest looking at scott robertson's how to draw, he has a section for rotating things in perspective which will give you an exact method to do it.
personally, i would say that you always try turning the angle in your head first.
then, after that, follow the exact angle-rotation procedure and compare your guess against your new results and see how close you were.
i think you'll get better and better at doing it intuitively the more you do this.
