I guess when you say Vermeer's camera you mean camera obscura. Camera obscura had been used for hundreds of years before Vermeer.

In any case, many artists used projection. Aside from Vermeer some prominent names are Maxfield Parrish and Norman Rockwell.

Plenty of people have used other historic means, such as Camera Lucida. People like Durer and Leonardo used means such as Durer's "drawing machine," and Leonardo traced landscapes on glass. Leonardo wrote many times of the wonders of Camera Obscura (as well as Magic Lantern, another projection device) but we don't know if he used them for art.
