I think the biggest point seems to the be way the knee is stylized. Muscle definition has more to do with feminity vs. masculanity, and this is relevant even in an Atelier setting drawing from life, where you'll be taught not to define muscles and shadows too much on a young female as to not age or define her too much (unless it's the goal).
So say if you're drawing a sports manga about volleyball girls, you'll want something like 4 & 5 unless you're drawing moeblobs playing, since people who are into sports will be interested in seeing such details on your female figures. If you envision it I'm sure you can see what I'm trying to convey.

But anyway, I do get what you're saying because I have similar taste. I think learning the kind of ideal you have here asks you to go by a sort of "symbol drawing logic" similar to how certain features of the face have to be drawn depending on the view angle. It's something that is hard to teach because ultimately everyone develops their own way of going about it, and it gets harder when it comes to anime because what works for someone might end up being a bad habit to another.

I guess we just gotta draw lol.
