This is one of the prototypical examples that come to mind. Take this picture and open it up in photoshop. Eyedrop every color you see. You'll find that every color shown has nearly the exact same hue. The variance in saturation, pulling colors closer to gray, has a cooling effect. The eyes seem blue, even though they're not. If you were to try to paint those eyes with a literal blue pigment, they might appear garish or inconsistent with the overall lighting.
