Gradients from airbrush or different blending techniques. A limited palette is from the limitation of pigments in physical paint. A physical pigment reflecting a light wavelength is different than a light diode in a screen that can be tuned to just about any color on the visual spectrum. There's a reason when you print a picture it's not the same colors as your screen unless you're working in a highly professional setting. So either buy real physical Japanese paints and animate cels by hand, or strictly sample your digital colors from analogue anime to get as close to the pigment limitations as possible.
