Buying an adoptable is essentially paying for the rights to use the design. Some look the same because they belong to a species, and back in the days, people would pay a shit ton of money to buy a design that belonged to a popular closed species. For example, see bagbeans. (pic related.)

Yep, that's basically it. Some people just don't want to go through designing their own characters, don't have the skills to execute a deisgn nicely, or just admire the artist enough to get something special from them.
