shows the problems i mentioned a lot more clearly, and I'm already going in and trying to hit small orange/red notes when the overall saturation and temperature is completely wrong

imo if youre just starting out try to make an accurate copy, since your improvement will come from "seeing" and recreating accurately. you don't necessarily need to study someone else's art, you can just draw jars or flowers or hands etc from real life.
later on when you study other artists or photos to learn color etc. you have to think more about what you want to learn from the experience
(especially with photos which often neuter the dynamic range + more subtle notes of the actual scene)
