I thought the one on the right was the newer one, for what it's worth, and I like the energy in this newest drawing a lot. I think it might be helpful when you start hatching to pick a strong light source and build some large, bold shadow shapes based on that. Keeping the hatching really simple could help too, maybe just have it mainly going in one direction throughout like how he does it at around 2:15 in your video. Also, don't be afraid to leave large parts of the illustration white so that the hatching has something to contrast with!
here's an example of how I might do it, with the light source above the guy in the first example and the light coming from the fire in the second drawing. let me know what you think
