Postal votes weren't allowed to be counted until election day in some states, due to laws pushed by the conservative party. In most states they counted postal votes during the weeks leading up to to the election, so on election day they only had to count new votes and could get an accurate vote count out on election night.
Basically a few states are held up with a lot of postal votes to count, and we won't know the accurate results for a few hours to a few days.

Yes, we've never had so much mail-in voting, likely because of covid discouraging people from voting in-person.
