Do you see how he draws the rib cage from one shoulder to another in several lines? The reason he's doing this is to find the gesture and structure of the body. He has no problem going from point A to point B in one smooth stroke.

Chicken scratching would be drawing from point A to point B in several lines. Beginners do this because they're not confident hitting the endpoint. They're too busy trying to make the lines connect and thus ignoring the gesture of the object.
