For the horse specifically. The pose you chose is very awkward. The horse's torso is almost facing us (almost profile on your ref) and the hind legs pose make them look a bit flimsy. The head is also looking down (more than the ref) which makes the horse looks meek.

The front and hind legs are almost parallel and not very meaty. All and all makes the horse doesn't give the impression you want it to give.
