big key to it is subsurface scattering and understanding that. painting it on one layer is difficult and requires a higher understanding of color interactions and studying anatomy, and I think most of the people who have plastic/dead skin painting are painting on one layer. multiple layers does some of the work for you and makes it so you can avoid muddiness. skin is deceptively colorful so its easy to go muddy. there are tons and tons of tutorials with different ways to convey the life in skin, find one that works for what you want or play around with layer modes yourself.
doxy has a pretty good one where he uses several layers to get the effect he wants. (pic related)
