Anatomy is difficult because human beings are peculiar creatures with strange anatomy - our spines are very weird, as is our facial anatomy.

Add onto that, human brains like to break things down into symbols and there is nothing we break down more than our own faces. Social species and all.

At least, that's my take. I would still say accurately portraying light and color is more difficult but that's because I find it much more boring than anatomy, which I am naturally interested in as a biology nerd.

I think the topics you are less interested in will be more difficult than those you naturally care about. The human body is a fascinating machine while I've never cared about lighting much until I started getting more into film.
