I'm just starting to draw, but I guess it'd depend on how far you are from what you're copying and if its 2D or an actual 3D object.
Look at pic related. Since your hand is so close to you while you're copying it (and, of course, is 3D), doing so without closing an eye would be a pain in the ass, since you'd be seeing two different perspectives of it at the same time. Now, if whatever 3D object you're copying is further away from you, I don't think it'd be necessary to close one eye.
