I use indian ink, it's great. For my dip pen I have ''ordinary'' pilot ink (water soluble) and indian ink (=waterproof). The pilot works on everything and gets tight and shiny without bleeding, but it smears and dissolves as soon as it gets close to moisture (actually useful for ink washes).

The indian ink bleeds through most of my ordinary paper so I have to use it on bristol/heavy hot press stuff, but it is waterproof so I can use watercolors with it. Though smooth paper is not ideal with watercolors, so maybe markers/other stuff that'd cause problems with non-waterproof would be better. Office pens and most fine liners are waterproof by the way.
