From my understanding of it it's just composition and focus. I wouldn't say there's a "painting tutorial" for such a thing. Draw sharp/cell shaded and use clashing/contrasting colors so the sexy point in the focus of the cover. Also generally focus the cover on whatever the main deal of the doujin is. If you want to get an idea of how they're picking their colors and shades take a color picker to whichever one you're looking at and find the consistency in color schemes that the artist uses.

As for composition, they usually make the background simple as to not detract focus from the center point of the cover.

Really it's all just fundies. Anything can be a doujinshi cover, with the right composition simplicity.
