Gesture is all about what the thing you're drawing is doing. You capture stuff like the way it bends, twists or stretches, the angle it's at and the general position of the individual parts in relation to the rest. This may often boil down to simplified contours, but it also often doesn't.
What helped me a lot to understand gesture is watching a range of other artists do it. The way artists approach a gesture drawing can vary a lot so the results may look different but they all convey the same things.
