The story is mediocre and generic power fantasy like you said, but the art is really good, it's probably better than 99% of comics, manga and webtoons so that explains its popularity, people wanted Ufotable to animate so basically Demon Slayer where the animation carries the lack of story.

Chainsaw Man isn't loved by the manga fans but it's still an extremely popular anime because of the hype pre anime.

Most people don't care about complex writing and art, so it checks out, just look at the huge amount of Otome Isekai, they're all the same story with mid art.
