I feel like I'm finally beginning to understand construction somewhat, but I'm struggling making my shit not look flat a lot of the time. I think I'm the least shit at a slightly above three quarter view, but what do you all think?

Should I just experiment with different shapes with the same pose and see what works best?

I've only been doing digital. It takes some getting used to, especially the disconnect with the tablet if yours doesn't have a screen, but I like it. Might still want to switch between traditional and digital occasionally though, just so things are flexible.
