Because masters, like any artist, choose to include or exclude certain things from a picture. Sometimes they emphasize things, sometimes they choose to make a muscle smoother than it really is. If you're a beginner and you study from finished work then all of the choices are made for you and your learning is skewed. If you study from life first then you can look at a master painting and notice those changes: why did the artist emphasize these muscles, why did they make her face smoother, why did they simplify this lighting? You learn a lot more and build a solid foundation for your own art.
