Hello, I'm thinking of translating a bunch of Japanese PDF's to english. What fonts should I use? (And preferable font-sizes?)

I'm going to try translating 1 PDF first, and see if the community likes it then decide if I want to continue doing this.

Let's use pic-related as an example. What font should I use for the top Kanji?
What font should I use for the text below the top one? Also if anyone done this kind of editing before, I'm open to recommendations for software. In meantime I'll use GIMP.
