Don’t be a retard, I’m pretty sure Marco Bucci has a video on this very phenomenon and how hues, chroma and values are linked (It’s called something strange about colors iirc).

Also, your process of dropping the saturation doesn’t work for achieving true grayscale- using just a color layer is also not how you work in grayscale so it’s normal you get inconsistencies.

So yes, it’s a cursed and outdated workflow. Id your work is color heavy like OP pic you’re better off just straight up painting it normally and checking the values from time to time using black and white gradient maps, not desaturate the image.

If you were to slice this like an apple you get little wedges of color that form the Munsell Book of Color
