How do you know when to end making a piece? I sometimes can work on something for 5 hours and still not like it, and sometimes do scribbles like picrel under 10 minutes and call it a day.

as for actual sins against art - shredded almost every art piece/sketch i didn't like or deemed unworthy untill i was 15. Like 200 out of 600 pieces a year i make would just get dusted. I'd say i don't feel bad for the 15% of them that was soft porn, but it still was art.
