It's more that textures and gradients automatically add visual interest by making the image more complex. You don't need them by any means, but flat colored works often seem a bit visually uninteresting compared to rendered works because the viewers eye has less to process than a rendered work. Textures can re-add that visual interest, but they aren't a necessity.
