You are going to want something that holds the paper up at an angle that is perpendicular to your eyes. This will minimize distortion and allow you to effectively utilize multiple different grips: overhand grip, inverted grip, pickup grip, etc.

If you lay the paper flat on a table, you have to hunch your neck over to see what you're drawing, which is bad when you're drawing from reference. It is optimized for tripod grip, which is terrible for drawing expressively, which is one of the most fundamental skills to learn as a beginner.

I think one of the most underrated pieces of advice for beginners is to get a drawing board (pic related).
