All mechs with head-mounted cockpits have three units of internal structure there. Additionally, they have armor - lighter mechs typically have less protection, but mechs upwards of anything bigger than about 45 tons usually (there are exceptions, of course) mount nine units of armor on the head to protect the pilot.

This means that any weapon which does ten points of damage - such as the particle projection cannons (PPC's, for short) mounted on the WHM-6R Warhammer seen blazing away in the background of >>3466585 - can potentially kill any other mech with a single shot by striking the head, eliminating all the armor, and damaging one unit of internal structure. The effects of the damage can range from "nothing" to those rare catastrophic occasions where the entire head is blown clean off.

That illustration is somewhere in the middle; after all, the head has other things inside such as life support equipment, sensors, communication gear, and - depending on the design - sometimes even a weapon, but as far as the pilot is concerned, the cockpit is undoubtedly the most crucial. It's where he's sitting.
