For anatomy you can just google for tutorials. I find the small series from the artist of pic related pretty helpful, but there's always more to learn. Professional art channels on YouTube (like Proko, one of my favorites) really go in-depth on different parts of the body and muscles, and how to draw them ofc. For inking, it really depends on your style, if you don't wanna go for cartoony/ anime then staying with a pencil is fine. As far as I know using a thicker pen for the outlines and a thin pen for details/ smaller parts works best, but it's all just a matter of finding out for yourself
