Number one and most obvious, he is undoubtedly an attractive man. Angular face, strong features, nice lips, good hair and vexing blue eyes. He also has a decent all be it lean build which girls really like.

Though the reason he has such a cult following I imagine is mostly because of his role in The Notebook. Girls grew up to this movie and fantasised about having Noah (Gosling) smashing their guts. Hell, he is probably the first thing a lot of girls finger bashed it to. So he gets extra points and appeal because he is like a lot of girls first.

Similar thing with Emma Watson. Nothing outstanding about her, but she is like a childhood friend who grew up to be hot, and you would give your left nut to fuck.
